Back to school means back to packing lunches—and if your child has food allergies, finding safe, delicious, and exciting options can be a daily challenge. That’s why we’ve created three easy, allergen-safe lunchbox bakes using our top 14 allergen-free baking mixes: Chocolate Cake, Victoria Sponge, and Pancake & Waffle Mix.
These recipes are perfect for busy mornings, bake-ahead weekends, or even after-school snacks. They’re completely nut-free, dairy-free, gluten-free, and school-safe, so you can feel confident sending them in your child’s lunchbox.

Mini Pancake Skewers

Ingredients:
- x1 Pancake & Waffle Mix
- 220ml Plant Based Milk
- 1tbsp Apple Cider Vinegar
- 300g Chosen Fruit
- Cocktail Sticks
Method:
- Empty the Pancake & Waffle Mix into a large mixing bowl and add in the wet ingredients. Mix until smooth and combined.
- Add a splash of oil onto a frying pan and set to a medium heat.
- Take a tsp and add the mixture onto the frying pan (we are wanting to make mini pancakes).
- Continue until all the mixture has been used.
- Cut up all of the fruit that you would like to add to your mini pancake skewers and start stacking your skewers
- ENJOY!
Chocolate Cake Bites

Ingredients:
- x1 Chocolate Cake Baking Mix
- 200ml Plant Based Milk
- 160ml Vegetable Oil
- 250g Vanilla Buttercream
Method:
- Preheat the oven to 180 degrees
- Empty the mix into a large mixing bowl, followed by the wet ingredients. Mix until smooth.
- Grease a square take tin and pour the mixture in, distribute evenly
- Place in the oven for 25-30 minutes.
- Taking a circle cutter remove the cake using use to make the perfect bite sized cake.
- Top with buttercream icing and any chosen topping.
- ENJOY!!
Victoria Sponge Doughnuts

Ingredients:
- x1 Victoria Sponge Baking Mix
- 140ml Plant Based Milk
- 1 tbsp Lemon Juice
- 40g Dairy Free Spread
- 1 tbsp Vanilla Extract
- 300g Buttercream Icing
Method:
- Preheat the oven to 180 fan
- In a large mixing bowl combine in the mix along with the wet ingredients. Mix together until smooth.
- Distribute the mixture into your doughnut mould and add some jam half way through each doughnut and create a marbled effect.
- Place in the oven for around 15 minutes.
- Allow to cool before decorating and top with some buttercream icing and pink sprinkles.
