Whether you’re planning a garden picnic, a family BBQ, or just a quiet afternoon with a cup of tea and something delicious, summer is the perfect time to get creative in the kitchen.

You can whip up something amazing without worrying about allergies or intolerances because no one should have to miss out on the joy of homemade bakes.
This month, we’re sharing four of our favourite summer baking recipes that are easy, delicious, and totally inclusive. From fruity twists on classic favourites to fun new ideas for seasonal get-togethers, we’ve got something for everyone. Let’s get baking sunshine optional, sweet treats guaranteed!
1. Mini Cereal Pancakes

Ingredients:
- x1 Creative Nature Pancake & Waffle Mix
- 200ml Plant Based Milk
- 1tbsp Apple Cider Vinegar
- 100g Blueberries
- 100g Raspberries
Method:
- In a large mixing bowl add the mix followed by your wet ingredients. Mix until all combined.
- Add some oil to a frying pan and pop this on medium heat
- Taking a teaspoon add on the amount of mixture that fills the spoon. You want to make these small.
- Turn over after 30 seconds.
- Repeat until all of the mix has been used.
- Top with all of the fruit and ENJOY!!
2. Upside Down Apple Cake

Ingredients:
- x1 Creative Nature Victoria Sponge Cake
- 140ml Plant Based Milk
- 60ml Vegetable Oil
- 1tbsp Lemon Juice
- 1tsp Vanilla Extract
Method:
- Preheat your oven to 180c fan
- In a large mixing bowl pour in your mixture along with the plant based milk, lemon juice, vegetable oil and vanilla extract. Mix until combined.
- Slice your apples into your desired thickness and place to one side.
- In a saucepan melt down your dairy free spread.
- Pour the melted dairy free spread into your 10cm cake tin. Sprinkle the brown sugar into the butter and even out.
- Place your apples in the cake tin and make sure to fan out.
- Pour the Victoria Sponge mixture on top and place in the oven for 30-35 mins.
- Allow to cool for 20 mins and ENJOY!!
3. Choccy Fudgy Brownies

Ingredients:
- x1 Creative Nature Fudgy Brownie Mix
- 75ml Plant Based Milk
- 65g Dairy Free Spread
- 100ml Vegan Double Cream
- 150g Vegan Chocolate Chips
Method:
- Preheat your oven to 180c fan
- In a large mixing bowl combine your mix with the dairy free spread and plant based milk
- Grease a square cake tin and pour the mixture in. Place in the oven for 15-20 minutes.
- Place your vegan double cream in a saucepan over low-medium heat and add in your chocolate chips. Mix until all combined.
- Pour the mixture onto the cooled brownies
- Place in the fridge for 4 hours until set.
- ENJOY!
