Victoria Sponge Cake

WE HAVE JUST LAUNCHED OUR VICTORIA SPONGE CAKE!

We are so happy to have launched a brand new product to our range of baking mixes and that is our Victoria Sponge Cake. This has been one that we have been having a lot of requests for and the time is here that we are now launching this in demand product.

We have loved creating some of our first recipes with this baking mix, which of course we had to start of by doing a classic double tiered Victoria Sponge Cake.

This Baking Mix, just like the others has both a vegan and standard recipe so that everyone can be included when eating delicious food. This can be catered to all dietary requirements, so no one has to miss out.

Ingredients

  • Creative Nature Victoria Sponge
  • 130ml Plant Based Milk
  • 60ml Vegetable Oil
  • 2tbsp Lemon Juice
  • 250g Vegan Double Cream
  • 250g Strawberries
  • 150g Raspberries

Method

  1. Preheat the oven to 180 fan
  2. In a large mixing bowl empty the contents of the mix, followed by the wet ingredients. Mix together until smooth.
  3. Grease your 20cm cake tin and pour the mixture in. Using a spoon even out the mixture to ensure an even bake.
  4. Place in the oven for 25-30 minutes.
  5. Allow to cool for 20 minutes before decorating.
  6. Cut the cake in half to have a top and bottom.
  7. Once you have whisked your double cream add a thin layer of this to the bottom layer of the cake and add some raspberries and jam in the middle. Top with the other layer of the cake.
  8. Add your whipped cream to the top and top off with the Strawberries.
