Vegan Jaffa Cake

We decided to gift you with the perfect dairy free recipe to make your own vegan Jaffa Cake! To make it even better, it’s so easy. ⁠

We used our Corn Bread Baking Mix as the base and it is a DELICIOUS alternative! Add some orange marmalade and chocolate and there you have it! This is the perfect snack for the day with an afternoon coffee or tea.

Our Vegan Jaffa Cake is a great nut free alternative that is also free from dairy and gluten.

Our vegan jaffa cakes are a great snack for school or work as they are safe from the Top 14 allergens and so yummy too.

Not only this, they were easier to make than they look and you can always change the flavour of the filling.

Ingredients

  • 1x Creative Nature Corn Bread
  • 50ml Vegetable oil
  • 200ml Your milk of choice
  • 80g apple sauce
  • 200g vegan dark chocolate 
  • 150g orange marmalade

Method

  1. Firstly, preheat the oven to 200 degrees.
  2. Then in a bowl, pour the corn bread mix in and make a well in the middle. Then add the apple sauce, milk and vegetable oil in the centre and mix.
  3. Greaseproof a cupcake tin and distribute the corn bread mixture thinly  into each cupcake mould and place in the oven for 25 minutes.
  4. Whilst they are baking, melt the vegan dark chocolate in a glass bowl over a saucepan of boiling water.
  5. Once the corn bread is cool, spoon on a layer of marmalade and cover the top with vegan dark chocolate using a tablespoon.
  6. Place these in the fridge for around 40 minutes until the chocolate is set.
  7. Enjoy!
