Summer Fruit Cheesecake

Cheesecakes are the perfect dessert to polish off any meal that you have. The options of flavours are endless and this time round we have gone for a summer berry cheesecake. There is nothing not to love about this. It is an absolute must to try.

The best thing about cheesecakes is that they are great for all year round, they never go out of fashion in the food world.

The best part about this cheesecake is that we put our @magibles_offiicial inside the mixture and topped it off with them as well. ⁠

  • 150g Creative Nature Magibles
  • 150g Blueberries
  • 200ml Vegan Double Cream
  • 150g Vegan Cream Cheese
  • 2 tbsp Vanilla Essence
  • 1 lemon (juiced)

  1. Start by crushing up the digestive biscuits until crumbled and add the melted butter. Mix together until they are fully combined. 
  2. Add the crushed digestives to your cake tin and press down until smooth on top. Make sure that it is even. Place in the fridge while preparing the filling. 
  3. In a large mixing bowl add your cream cheese, double cream and lemon juice and mix well. Crush up some of the Magibles (remember to leave some to place on top) and add them to the mixture and combine. 
  4. Remove the tin from the fridge and put the filling inside. Make sure that the filling is distributed evenly over the biscuit base. 
  5. Place in the fridge for a further 40-45 mins. 
  6. Once your cheesecake has set, place your remaining Magibles on top and add your blueberries and other chosen fruit. 
  7. Enjoy!!
