Pink Chia Seed Pudding

Pink Chia seed pudding. It’s healthy, it’s delicious and it’s absolutely bursting with goodness!

This pretty pudding is certainly easy on the eye! But better than that, the chia seeds provide you with a great amount of fibre protein, omega fatty acids and minerals. Chia Seeds have also been suggested to contribute to the maintenance of normal blood cholesterol, bones, teeth and also supports normal muscle function.

You can top your pudding with whatever you like, but we chose to go with gluten free, nut free granola, kiwi and vegan yoghurt!

Ingredients

  • 65g Chia seeds (pref white)
  • 1 tablespoon maple syrup
  • The zest of one lime
  • 60ml cup lime juice
  • 1 tablespoon pitaya
  • 2 cups plant-based milk unsweetened

Method

 

  • Add all ingredients except the milk to a large mixing bowl and mix well.
  • Add half the milk to the mixture and, once this is combined, add the second half.
  • Once the mixture is thoroughly combined, cover and leave to set in the fridge for 30 minutes.
  • Pop the mixture into 4 pudding pots and top with your choice of toppings!
  • ENJOY!!
