Mint Chocolate Brownies

To kick off our week of Organic September we wanted to share this delicious mint chocolate brownies recipe with you all! ⁠

This recipe is gluten and dairy free so are perfect for dinner party desserts, parties and so much more.

If you love nut free brownies as much as we do, then this twist will be right up your street.

Our Mint Chocolate Brownies are a combination you didn’t know you needed but we can promise that they don’t disappoint.

These are so easy to bake which is an absolute bonus and they are a great school safe snack.

Our brownies are a great afternoon snack to pair with a cup of tea or coffee.

Ingredients

  • 1x Creative Nature Brownie Mix
  • 3 tbsp Milled Flaxseed
  • 9 tbsp Water
  • 125g Dairy Free Spread
  • 200g dairy free buttercream icing
  • 4tsp mint extract
  • 4 drops of green food colouring

Method

  1. In a bowl, mix the flaxseed and water, then leave to stand for about 10 mins, until gloopy.
  2. Preheat oven to 180°C/400°F/Gas Mark 4.
  3. Add the brownie mix, flaxseed, dairy free spread and 2tsp of mint extract into a mixing bowl and beat together until smooth.
  4. Carefully spoon the mixture into a square baking tin and place in the oven for 20-25 mins.
  5. Whilst the brownies are baking, mix together your dairy free buttercream, mint extract and green food colouring in a bowl.
  6. Once the brownies are cool, spread over the vegan buttercream and enjoy!
