Leek and Potato Soup
One of our favourite meals at the moment has to be leek and potato soup and we thought it’s time we made our own.
We can tell you one thing for sure we will no longer be buying shop bought leek and potato soup, it was absolutely delicious!!
As winter is still with us we wanted to add a little bit of protein to our soup with our nut free Hemp Protein powder.
Homemade free from soup is so easy to make and is perfect for meal prepping on days you need to go into the office or school.
Is there really anything better than a bowl of hot soup whilst it is cold outside, there is something to wholesome about that feeling.
The best thing about this vegan recipe is that it is so quick and easy to make and a great on the go lunch.

Ingredients
- 350g Leeks (white part only), cut into pieces
- 250g Potatoes, peeled and cubed
- 30g Dairy Free Spread
- 1 tbsp Creative Nature Hemp Protein
- 30g Virgin Oil
- 1 tsp salt
- 700g water
- 1 Vegetable Stock
- 100g of your favourite milk
- fresh chives, chopped

Method
- Heat up a pan and melt the butter. Place the leeks, potatoes inside and toss them until they are all covered in butter.
- Season with salt and add the vegetable stock and 700ml of water in the saucepan.. Place a lid on the top and simmer for 10 minutes until the vegetables start to soften.
- In a blender add the contents of the saucepan followed by the milk of your choice and hemp protein powder, blend until smooth.
- Dish up and sprinkle the chives on top. ENJOY!
