Christmas Pudding Carrot Cake

A festive twist on a classic! Our Christmas Pudding Cake brings all the warmth of the season without any of the allergens. Made with our Creative Nature Carrot Cake Mix, this rich, spiced bake is finished with smooth royal icing, glossy glacé cherries, and a sprinkle of golden sparkle, the perfect centrepiece for your allergy-safe Christmas table. Ingredients

  • 2 pack Creative Nature Carrot Cake Mix
  • 330g grated carrot
  • 120ml vegetable oil
  • 4 tbsp lemon juice
  • Royal icing (made with icing sugar and water)
  • Glacé cherries (for the berries)
  • Fresh holly leaves (or decorative holly)

Method

Bake the cake: In a bowl, mix together the two Carrot Cake Mixes, grated carrot, vegetable oil, and lemon juice until smooth. Pour into a glass pudding dish and bake as directed on the pack. Leave to cool completely.

Ice the top: Once cooled, spoon the royal icing over the top of the cake and let it gently drip down the sides for that classic Christmas pudding look.

Decorate: Add a few glacé cherries in the centre for berries and arrange holly leaves around them. Sprinkle with golden nuggets or glitter for a festive shimmer.

Serve and shine: A beautiful, allergen-safe take on the traditional Christmas pudding, simple, sparkling, and made for sharing.
