Carrot Cake Easter Egg Truffles

Not your average carrot cake… and definitely not your average Easter treat šŸ„•šŸ«

This is what happens when a humble bake gets a playful upgrade. Soft, spiced carrot cake is crumbled, whipped into a rich, chocolatey filling, then hidden inside a glossy chocolate shell, because why should eggs only be hollow?

Using our Creative Nature carrot cake mix as your base, this recipe leans into a little bit of experimentation, and a whole lot of indulgence.

Completely nut-free and made to dazzle, this is the kind of recipe that invites you to slow down, get your hands involved, and enjoy the process just as much as the result ✨

Ingredients

  • 1 x Creative Nature Carrot Cake
  • 70ml vegetable oil
  • 65ml water
  • 1tbsp apple cider vinegar
  • 165g grated carrots
  • 1 slab dark dairy free chocolate
  • 1tbsp nut-free chocolate spread

Method

  1. In a bowl combining the vegetable oil, water, apple cider vinegar and grated carrots with creative natures mix
  2. Pour the mixture into a lined baking tray and bake for 35-40 minutesĀ 
  3. Melt the dark chocolate using the double boiler method and pour into an Easter egg chocolate mould and pop into the freezerĀ 
  4. For the filling mix together 2 slices of the carrot cake with 1 tablespoon of nut-free chocolate spread until smooth
  5. Pop the mixture into a piping bag and were good to go!
  6. Pour the filling into the chocolate mould and cover with more melted chocolateĀ 
  7. Pop these into the freezer for 15 minutesĀ 
  8. Enjoy!!
