Finished with fresh fruit and a drizzle of maple syrup, this recipe is the perfect cosy treat for autumn mornings or a weekend baking activity with the kids.

Ingredients

  • 1 pack Creative Nature Pancake & Waffle Mix
  • 200ml plant-based milk
  • 2 tbsp Apple Cider Vinegar
  • Fresh fruit (berries, sliced apple, or pear work perfectly)
  • Maple syrup for drizzling

Method

  • Make the batter: In a bowl, whisk together the Creative Nature Pancake & Waffle Mix, plant-based milk, and apple cider vinegar until smooth.
  • Fill the piping bag: Transfer the batter to a piping bag and heat a non-stick pan over medium heat.
  • Pipe the leaves: Pipe a short stem first, wait a couple of seconds, then pipe two outer leaves, pause, and finally add the middle leaves.
  • Cook and flip: Let the leaves cook for 1–2 minutes until golden, then flip gently and cook the other side.
  • Top and enjoy: Serve your autumn leaves pancakes with fresh fruit and a drizzle of maple syrup.
