Raspberry Victoria Sponge Cupcakes

WE HAVE A NEW BAKING MIX IN TOWN!!

We are so excited to be able to share some recipes with you all using you brand new Victoria Sponge Cake. When we were launching this we knew we were going to do this recipe because it was just too good not to.

This recipe only requires a handful of ingredients, which we love. Baking should be hassle free and this is exactly what this baking mix is. It creates 6 delicious muffins for you and your family and friends to enjoy.

No one has to miss out on delicious food with our baking mixes, they are top 14 allergen free and cater for 98% of the population!! Will you be giving our Victoria Sponge a go?

Ingredients

  • Creative Nature Victoria Sponge Cake
  • 130ml Plant Based Milk
  • 60g Vegetable Oil
  • 2tbsp Lemon Juice
  • Raspberry Jam
  • Vanilla Buttercream
  • 150g Strawberries

Method

  1. Preheat the oven to 180 fan
  2. In a large mixing bowl add the mix along with all the wet ingredients. Mix together until all combined.
  3. Evenly distribute the mixture into 6 muffin cases.
  4. Place in the oven for around 25-30 minutes, until they have turned golden brown.
  5. Leave to cool for 2o minutes before decorating.
  6. Cut out a small hole in the centre of each muffin and place a tbsp of jam in the middle.
  7. Top with some Vanilla Buttercream and add a strawberry on top for the finishing touches.
  8. ENJOY!!!
