Halloween Cake Pops

There’s something about Halloween that makes everything more fun when it comes in bite-sized form. These carrot cake pops take all the cosy, spiced goodness of classic carrot cake and turn it into something a little more festive.

Made with our Carrot Cake Mix, freshly grated carrot, dairy-free cream cheese and a generous coating of vegan white chocolate, these little bites are finished with a drizzle of dark chocolate and a scattering of Halloween sprinkles. Because carrot cake was always going to look good in costume.

Soft and spiced in the middle, creamy where it needs to be, and completely free from gluten, dairy, and nuts, they’re made for Halloween parties, trick-or-treaters, or simply sneaking one (or three) from the fridge. Grab a pack, get rolling, and let’s make something spooky-sweet.

Ingredients

  • Creative Nature Carrot Cake Mix
  • 165g grated carrot
  • 50ml water
  • 75ml vegetable oil
  • 1 tbsp apple cider vinegar
  • 1 tbsp dairy-free cream cheese
  • 1 slab vegan white chocolate
  • Halloween sprinkles

Method

  1. Preheat the overn to 180ºC/350ºF/Gas Mark 4
  2. In a bowl, mix together the Creative Nature Carrot Cake Mix, water, oil and vingar
  3. Gently fold in the grated carrot, and leave to rest for two minutes
  4. Scoop the batter into a baking tin, and bake for 35-40 minutes
  5. Once baked, crumble the cake and add a tablespoon of dairy-free cream cheese
  6. Roll into balls and pop into the freezer for 20 minutes
  7. Coat the balls in white chocolate and pop back into the freezer for 15 minutes before decoarting
  8. Decorate with chocolate drizzle and Halloween sprinkles
  9. Enjoy!
