- Creative Nature Carrot Cake Mix
- 1/2 cup oats
- 1/4 cup unsweetened shredded coconut
- 1/4 cup crushed Graham Crackers or Digestive Biscuits
- 2 tbsp maple syrup or honey
- 1 tbsp chia seeds (optional)
- A pinch of cinnamon

Method
- In a bowl, mix the Carrot Cake Mix, oats, shredded coconut, cinnamon and crushed Graham Crackers.
- Add the maple syrup, and chia seeds (if using), then mix until combined. The mixture should be sticky but firm enough to roll.

- Refrigerate for 30 minutes to set before serving.
