Ingredients

  • Creative Nature Carrot Cake Mix
  • 1/2 cup oats
  • 1/4 cup unsweetened shredded coconut
  • 1/4 cup crushed Graham Crackers or Digestive Biscuits
  • 2 tbsp maple syrup or honey
  • 1 tbsp chia seeds (optional)
  • A pinch of cinnamon

Method

  1. In a bowl, mix the Carrot Cake Mix, oats, shredded coconut, cinnamon and crushed Graham Crackers.
  2. Add the maple syrup, and chia seeds (if using), then mix until combined. The mixture should be sticky but firm enough to roll.
  3. Roll the mixture into small balls, about 1 inch in diameter.
  4. Refrigerate for 30 minutes to set before serving.
