Super Star Cupcakes

Made with our light and fluffy Victoria Sponge Mix, these cupcakes shine with swirls of pastel frosting and edible stars on top. A simple bake that’s guaranteed to make your dessert table sparkle. As with all Creative Nature treats, these cupcakes are completely free from the top 14 allergens and carry our no “may contain” promise, so everyone can enjoy a slice of the magic!

Ingredients

  • 1 pack Creative Nature Victoria Sponge Mix
  • 140ml plant-based milk
  • 60ml vegetable oil
  • 2 tbsp lemon juice
  • 1 tsp vanilla extract
  • Allergen-safe buttercream
  • Vegan chocolate
  • Sprinkles

Method

Bake the cakes: In a bowl, whisk together the Victoria Sponge Mix, plant-based milk, vegetable oil, lemon juice, and vanilla extract until smooth. Divide into cupcake cases and bake as directed on the pack.

Make the stars: Melt your chocolate over the hob in a bowl over boiling water and put into piping bag once melted. Pour sprinkles onto a small baking tray and pipe stars on top. Put in fridge to set. 

Pipe the frosting: Put vegan buttercream in a piping bag and pipe the cream in a swirl on top of the cupcake

Decorate: Stick your chocolate stars into the icing, Sprinkle with edible glitter or star-shaped decorations for a magical finish.
